Relax on a hot summer's day with a big glass of blackberry Italian soda. Perfectly pairing the sharp sweet tang of a blackberry with the light bubble of an Italian soda. Fresh blackberries make for the perfect garnish.

1 0z gin
.5 oz Whidbey Island Distillery Blackberry Liqueur
.5 oz Aperol
.5 oz fresh lime juice
Soda
Blackberry whip

Fill glass with ice, pour half full with soda, drizzle top 4 ingredients, top with blackberry whip. Garnish with shaved chocolate and fresh berries.

 

To make the blackberry whip:

  • 1 cup chilled heavy whipping cream

  • 2 Tbsp. sugar

  • 1 Tbsp. blackberry liqueur

  • ¼ tsp. vanilla

Combine ingredients in a mixing bowl. Cream should be straight from the refrigerator. Whip, check taste when cream has slight peaks that do not hold. Add more sugar or liqueur to taste if desired. Beat another minute or two until cream is whipped (it has peaks that bend and curl at the tips).
